Oven-Baked Sun-Dried Tomato Falafel
Ingredients
- 1 tin (300g) chickpeas, rinsed and drained
- 100g sun-dried tomatoes + 2 tbsp from oil
- 2 tbsp chickpea flour
- 2 tbsp tomato paste
- Handful of parsley, chopped
- 2 garlic cloves
- 1 tsp cumin
- 1 tbsp paprika
- 1/2 teaspoon chilli, chopped
- Juice of 1/2 lemon
- 1 teaspoon salt
Serving suggestions
- 4 pita
- Hummus
- Red onion
- Salad
- Tomatoes
- Vegan yogurt
- More fresh parsley
Preparation
Combine all ingredients in a food processor and blend until the mixture is well combined and holds together.
Form the mixture into small balls or patties.
Preheat oven to 200°C and bake on a lined tray for 20-25 minutes, or until golden and crispy.
Serve in warm pita with hummus, salad, cucumber, onion, tomatoes, and vegan yogurt.
