Oven-Baked Sun-Dried Tomato Falafel

Ingredients

  • 1 tin (300g) chickpeas, rinsed and drained
  • 100g sun-dried tomatoes + 2 tbsp from oil
  • 2 tbsp chickpea flour
  • 2 tbsp tomato paste
  • Handful of parsley, chopped
  • 2 garlic cloves
  • 1 tsp cumin
  • 1 tbsp paprika
  • 1/2 teaspoon chilli, chopped
  • Juice of 1/2 lemon
  • 1 teaspoon salt

  • 4 pita
  • Hummus
  • Red onion
  • Salad
  • Tomatoes
  • Vegan yogurt
  • More fresh parsley

Preparation

  1. Combine all ingredients in a food processor and blend until the mixture is well combined and holds together.

  2. Form the mixture into small balls or patties.

  3. Preheat oven to 200°C and bake on a lined tray for 20-25 minutes, or until golden and crispy.

  4. Serve in warm pita with hummus, salad, cucumber, onion, tomatoes, and vegan yogurt.
