Beet Falafel with Herbs
Ingredients
- 1 large beet
- 1 can chickpeas
- 1 bunch cilantro
- 1/2 bunch parsley
- 1 sweet onion
- 1 cup rolled oats
- 1 tablespoon paprika
- 2 tablespoons cumin
Preparation
Grate the beet and chop the onion, cilantro, and parsley.
Drain the canned chickpeas.
Mix all the ingredients together in a bowl until well combined.
Form the mixture into small balls or patties.
Fry the falafel in hot oil until golden brown and cooked through.
Serve as desired, such as in a bowl or with accompaniments.
Notes
Adding beets provides a beautiful color and a hint of sweetness to the falafel.
