Beet Falafel with Herbs

Ingredients

  • 1 large beet
  • 1 can chickpeas
  • 1 bunch cilantro
  • 1/2 bunch parsley
  • 1 sweet onion
  • 1 cup rolled oats
  • 1 tablespoon paprika
  • 2 tablespoons cumin

Preparation

  1. Grate the beet and chop the onion, cilantro, and parsley.

  2. Drain the canned chickpeas.

  3. Mix all the ingredients together in a bowl until well combined.

  4. Form the mixture into small balls or patties.

  5. Fry the falafel in hot oil until golden brown and cooked through.

  6. Serve as desired, such as in a bowl or with accompaniments.

Notes

  1. Adding beets provides a beautiful color and a hint of sweetness to the falafel.
