Vegan Cauliflower Falafel Burger
Ingredients
- ~2 cups cauliflower, finely chopped into ~1/4 inch pieces
- 1 flax egg (1 tablespoon ground flax + 3 tablespoons water) or substitute 1 egg
- 1 can chickpeas
- 3 tablespoons tahini
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 cup finely chopped parsley
- 3 tablespoons oat flour
- Salt and pepper to taste
- Juice of 1/2 lemon

Preparation
Preheat oven to 425 degrees.
Toss cauliflower in salt, pepper and oil. Roast for 30-40 minutes or until crispy.
Make your flax egg by mixing flax and water. Let sit refrigerated for 10-30 minutes.
In a large bowl partially mash 1 can of chickpeas. Add all remaining ingredients including cauliflower and flax egg and mix.
Form 3-4 evenly sized burgers.
Cooking methods
For stove top method: Heat oil in a skillet over medium heat and cook burgers for 5 minutes on each side.
For oven method: Bake burgers for 35-40 minutes.
Serving
Serve burgers on a toasted bun with toppings of choice.
Extra burgers can be stored in the freezer.
