Vegan Cauliflower Falafel Burger

Ingredients

  • ~2 cups cauliflower, finely chopped into ~1/4 inch pieces
  • 1 flax egg (1 tablespoon ground flax + 3 tablespoons water) or substitute 1 egg
  • 1 can chickpeas
  • 3 tablespoons tahini
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 cup finely chopped parsley
  • 3 tablespoons oat flour
  • Salt and pepper to taste
  • Juice of 1/2 lemon

Preparation

  1. Preheat oven to 425 degrees.

  2. Toss cauliflower in salt, pepper and oil. Roast for 30-40 minutes or until crispy.

  3. Make your flax egg by mixing flax and water. Let sit refrigerated for 10-30 minutes.

  4. In a large bowl partially mash 1 can of chickpeas. Add all remaining ingredients including cauliflower and flax egg and mix.

  5. Form 3-4 evenly sized burgers.

Cooking methods

  1. For stove top method: Heat oil in a skillet over medium heat and cook burgers for 5 minutes on each side.

  2. For oven method: Bake burgers for 35-40 minutes.

Serving

  1. Serve burgers on a toasted bun with toppings of choice.

  2. Extra burgers can be stored in the freezer.
