Spiced Fries with Roasted Garlic Hummus

Ingredients

Fries

  • 2 sweet potatoes
  • 2 yellow potatoes
  • 1-2 tablespoons grape seed oil
  • 1-2 tablespoons French fries spice mix

Hummus

  • 2 cups chickpeas
  • 2 tablespoons tahini
  • juice of 1 lemon
  • salt
  • cumin
  • paprika
  • 4 roasted garlic cloves
  • some water

Spice mix

  • salt
  • onion
  • paprika
  • pepper
  • garlic
  • curry mix

Preparation

  1. Preheat oven to 400 F (200 C).

  2. Cut peeled potatoes into even strips.

  3. In a bowl, mix together oil and spices.

  4. Add potatoes and use hands to toss them in the spice mix until evenly covered.

  5. Bake on a lined baking sheet for 50-60 minutes, stirring once or twice in between.

Hummus

  1. Roast garlic cloves with a little oil until fragrant.

  2. Blend roasted garlic with chickpeas, tahini, lemon juice, salt, cumin, paprika, and some water until smooth.

Tips

  1. Cut potatoes as evenly as possible for consistent cooking.

  2. Choose potatoes of similar shape and size to help with even preparation.
