Cajun Spiced Potato Wedges and Avocado Dip
Ingredients
Wedges
- 2 large potatoes
- olive oil
- Cajun spice mix
- nutritional yeast (optional)
- salt
Avocado lime dip
- 1 ripe medium avocado
- juice of 1/2 a lime
- salt and pepper or dried chilli flakes
Preparation
Preheat oven to 200C/180C fan/400F/gas 6 and line a baking tray with non-stick parchment.
Cut potatoes into wedges and place them in a mixing bowl.
Drizzle the wedges with a little olive oil and stir well.
Coat the wedges with desired amount of Cajun spice, sprinkle with nutritional yeast for cheesy flavor and crispiness, and season with salt.
Stir well with a wooden spoon until fully coated.
Place the wedges on the baking tray and bake for 25-30 minutes until golden and crispy.
Mash one ripe medium avocado until smooth and creamy, add the juice of half a lime, season with salt and pepper or dried chilli flakes, and mix well.
