Vegan Cashew Christmas Cheese

Ingredients

  • 75g unsalted cashew nuts
  • 150ml plant milk
  • 4 tbsp corn starch
  • 3 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp garlic powder

Coating

  • Herbs de Provence

Preparation

  1. Add all cashew cheese ingredients into a blender or food processor and blend until smooth.

  2. Pour the mixture into a pan and heat up, stirring constantly until it turns into a thick paste.

  3. Transfer the paste into a suitable container and even it out.

  4. Refrigerate for 1 hour.

  5. Sprinkle herbs de Provence on a plate and coat the cheese on all sides.

Tips

  1. Feel free to add cranberries, walnuts, or other add-ins for variation.

  2. Spread on crackers, bread, or add to your salad.
