Vegan Mozzarella Cheese Balls

Ingredients

  • 1 cup (130g) cashews
  • 1 1/4 cup (310g) vegan yogurt
  • 1/4 cup (60ml) non dairy milk
  • juice of 1/2 lemon
  • 1 tablespoon nutritional yeast
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 6 tablespoons corn starch

Preparation

  1. Boil the cashews in water for 15 minutes.

  2. Blend all ingredients together and heat the mixture while stirring constantly until it thickens.

  3. Prepare an ice bath by mixing ice cubes, water, and salt.

  4. Scoop the thickened mozzarella mixture into the ice bath and refrigerate for 3 hours.

  5. Remove from the water and refrigerate for an additional 2-3 hours.

Tips

  1. This mozzarella is perfect for summer and can be used in caprese, sandwiches, or even pizza.
