Vegan Cheesy Pesto Avocado Toastie
Ingredients
Pesto
- 2 tbsp cashews
- handful basil leaves
- handful chopped kale
- 1 garlic clove, crushed
- 2 tbsp nutritional yeast
- juice of 1/2 lemon
- salt and pepper, to taste
- olive oil, as needed
Sandwich assembly
- 2 slices bread
- vegan cheese, as needed
- 1 avocado, sliced
- sauerkraut, as needed
Preparation
Add cashews, basil leaves, chopped kale, garlic clove, nutritional yeast, lemon juice, salt, pepper, and olive oil to a food processor and blend until creamy
Spread a thick layer of pesto on each slice of bread
On one slice of bread, layer vegan cheese, avocado slices, and sauerkraut
Top with the remaining slice of bread to form a sandwich
Toast the sandwich in a griddle pan until crispy and golden brown around the edges
Notes
Substitute sauerkraut with pickle if preferred
