Vegan Cheesy Pesto Avocado Toastie

Ingredients

Pesto

  • 2 tbsp cashews
  • handful basil leaves
  • handful chopped kale
  • 1 garlic clove, crushed
  • 2 tbsp nutritional yeast
  • juice of 1/2 lemon
  • salt and pepper, to taste
  • olive oil, as needed

Sandwich assembly

  • 2 slices bread
  • vegan cheese, as needed
  • 1 avocado, sliced
  • sauerkraut, as needed

Preparation

  1. Add cashews, basil leaves, chopped kale, garlic clove, nutritional yeast, lemon juice, salt, pepper, and olive oil to a food processor and blend until creamy

  2. Spread a thick layer of pesto on each slice of bread

  3. On one slice of bread, layer vegan cheese, avocado slices, and sauerkraut

  4. Top with the remaining slice of bread to form a sandwich

  5. Toast the sandwich in a griddle pan until crispy and golden brown around the edges

Notes

  1. Substitute sauerkraut with pickle if preferred
