Easy Vegan Margherita Toast Sandwich

Ingredients

  • 4 slices of bread
  • 2 big tomatoes
  • 2 handfuls of vegan cheese
  • Basil leaves
  • Plant butter
  • Salt
  • Pepper

Preparation

  1. Cut the bread into 4 slices

  2. Spread plant butter on one side of each slice of bread

  3. Wash and chop the tomatoes

  4. Place the chopped tomatoes, vegan cheese, and basil leaves on the unbuttered side of half of the bread slices

  5. Drizzle with salt and pepper

  6. Top with the remaining bread slices, buttered side up, to form sandwiches

  7. Cook the sandwiches in a pan over medium heat for 2-3 minutes on the first side

  8. Flip when the first side is golden, crispy, and the cheese has melted, then cook for 2-3 minutes on the second side
