Cheesy Pesto Avocado Toast

Ingredients

Pesto

  • 2 tbsp cashews
  • handful of basil leaves
  • handful of chopped kale
  • 1 crushed garlic clove
  • 2 tbsp nutritional yeast
  • juice of 1/2 lemon
  • salt and pepper to taste
  • glug of olive oil

Sandwich components

  • bread slices
  • vegan cheese
  • avocado
  • sauerkraut or pickle

Preparation

  1. Add the pesto ingredients to a food processor and blitz until creamy.

  2. Spread a thick layer of pesto on each slice of bread.

  3. Add the cheese, avocado slices, and sauerkraut or pickle to the bread.

  4. Toast the sandwich in a griddle pan until crispy and golden brown around the edges.

Tips

  1. If you don't like sauerkraut, substitute it with pickle.
