Cheesy Pesto Avocado Toast
Ingredients
Pesto
- 2 tbsp cashews
- handful of basil leaves
- handful of chopped kale
- 1 crushed garlic clove
- 2 tbsp nutritional yeast
- juice of 1/2 lemon
- salt and pepper to taste
- glug of olive oil
Sandwich components
- bread slices
- vegan cheese
- avocado
- sauerkraut or pickle
Preparation
Add the pesto ingredients to a food processor and blitz until creamy.
Spread a thick layer of pesto on each slice of bread.
Add the cheese, avocado slices, and sauerkraut or pickle to the bread.
Toast the sandwich in a griddle pan until crispy and golden brown around the edges.
Tips
If you don't like sauerkraut, substitute it with pickle.
