Vegan Veggie Sandwich with Basil Pesto

Ingredients

  • Basil pesto (see Basil Pesto section)
  • avocado
  • leafy greens
  • tomato slices
  • sourdough bread
  • melty shredded vegan cheese

Basil pesto

  • 3 cups basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts
  • 2 garlic cloves
  • Himalayan sea salt, to taste

Preparation

Basil pesto

  1. Add all ingredients except olive oil to a food processor

  2. Pulse until evenly chopped

  3. Slowly add olive oil through the top of the processor and pulse until combined

Sandwich assembly

  1. Spread the basil pesto on slices of sourdough bread

  2. Layer with avocado, leafy greens, tomato slices, and melty shredded vegan cheese

  3. Serve immediately or heat to melt the cheese if desired
