Vegan Veggie Sandwich with Basil Pesto

Ingredients

  • Avocado
  • Leafy greens
  • Tomato slices
  • Sourdough bread
  • Melty shredded vegan cheese

Basil pesto

  • 3 cups basil
  • Juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts or cashews
  • 2 garlic cloves
  • Himalayan sea salt, to taste

Preparation

  1. Add all basil pesto ingredients except olive oil to a food processor and pulse until evenly chopped.

  2. Slowly add olive oil through the top of the processor and pulse until combined.

  3. Spread the basil pesto on sourdough bread, then add avocado, leafy greens, tomato slices, and melty shredded vegan cheese to assemble the sandwich.
