Vegan Veggie Sandwich with Homemade Basil Pesto

Ingredients

  • avocado
  • leafy greens
  • tomato slices
  • sourdough bread
  • melty shredded vegan cheese

Basil pesto

  • 3 cups basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts (or cashews in a pinch)
  • 2 garlic cloves
  • Himalayan sea salt, to taste

Preparation

  1. Add all basil pesto ingredients except olive oil to a food processor and pulse until evenly chopped

  2. Slowly add olive oil through the top of the processor and pulse until combined

  3. Spread the basil pesto on slices of sourdough bread

  4. Layer avocado, leafy greens, and tomato slices on one slice of bread

  5. Top with melty shredded vegan cheese

  6. Cover with the other slice of bread to form a sandwich
