Vegan Veggie Pesto Sandwich

Ingredients

Sandwich

  • 2 slices of bread
  • 1/2 an avocado
  • Any leafy greens
  • Tomato slices
  • Melty shredded vegan cheese
  • Home Made Pesto

Pesto

  • 3 cups basil
  • Juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts or cashews
  • 2 garlic cloves
  • Himalayan sea salt to taste

Preparation

Pesto

  1. Add all ingredients except olive oil to a food processor.

  2. Pulse until evenly chopped.

  3. Slowly add olive oil through the top of the processor and pulse until combined.

Sandwich assembly

  1. Spread the homemade pesto on the bread slices.

  2. Add sliced avocado, leafy greens, tomato slices, and vegan cheese to one slice.

  3. Top with the other bread slice to form the sandwich.
