Vegan Veggie Pesto Sandwich

Ingredients

  • 2 slices of bread
  • 1/2 an avocado
  • Any leafy greens
  • Tomato slices
  • Melty shredded vegan cheese
  • Home Made Pesto

Pesto

  • 3 cups basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts (or cashews in a pinch)
  • 2 garlic cloves
  • himalayan sea salt, to taste

Preparation

  1. Spread the homemade pesto on the bread slices.

  2. Add sliced avocado, leafy greens, tomato slices, and vegan cheese.

  3. Assemble the sandwich and serve.

Pesto making

  1. Add all ingredients except olive oil to a food processor.

  2. Pulse until evenly chopped.

  3. Slowly add olive oil through the top of the processor and pulse until combined.

Notes

  1. Perfect for work lunches, weekend picnics, or road trips.
