Vegan Veggie Sandwich with Basil Pesto

Ingredients

  • Basil pesto
  • Avocado
  • Leafy greens
  • Tomato slices
  • Sourdough bread
  • Melty shredded vegan cheese

Basil pesto

  • 3 cups basil
  • Juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts
  • 2 garlic cloves
  • Himalayan sea salt, to taste

Preparation

  1. Add all basil pesto ingredients except olive oil to a food processor and pulse until evenly chopped.

  2. Slowly add olive oil through the top of the processor and pulse until combined.

  3. Spread the basil pesto on slices of sourdough bread

  4. Layer avocado, leafy greens, tomato slices, and melty shredded vegan cheese on the bread

  5. Assemble the sandwich and heat if desired to melt the cheese
