Vegan Satisfaction Sandwich with Avocado Pesto

Ingredients

  • favourite plant-based vegetables
  • avocado
  • whole grain bread

Pesto

  • 1 handful baby spinach
  • 1 handful basil
  • 1 handful pine nuts
  • 200ml olive oil
  • 1 clove garlic
  • 1 dash lemon juice
  • salt and pepper

Preparation

  1. Mash the avocado

  2. Stack the vegetables and avocado between slices of whole grain bread

  3. Add the homemade pesto on top

Pesto making

  1. Put all ingredients in the blender and blend until creamy consistency

  2. Season the pesto with salt and pepper

  3. Enjoy the pesto
