Vegan Veggie Sandwich with Pesto

Ingredients

  • prepared basil pesto
  • avocado
  • leafy greens
  • tomato slices
  • sourdough bread
  • melty shredded vegan cheese

Basil pesto

  • 3 cups basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts or cashews
  • 2 garlic cloves
  • himalayan sea salt to taste

Preparation

  1. Add all ingredients except olive oil to a food processor. Pulse until evenly chopped.

  2. Slowly add olive oil through the top of the processor and pulse until combined.

Sandwich assembly

  1. Prepare the basil pesto as directed.

  2. Spread pesto on sourdough bread slices.

  3. Add avocado slices, tomato slices, and leafy greens.

  4. Top with shredded vegan cheese and melt if desired.

  5. Assemble the sandwich and serve.
