Vegan Vegetable Sandwich with Basil Pesto

Ingredients

  • basil pesto
  • avocado
  • leafy greens
  • tomato slices
  • sourdough bread
  • shredded melty vegan cheese

Basil pesto

  • 3 cups fresh basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts (or cashews in a pinch)
  • 2 garlic cloves
  • Himalayan sea salt, to taste

Preparation

  1. Add all ingredients except olive oil to a food processor. Pulse until evenly chopped

  2. Slowly add olive oil through the top of the processor and pulse until combined

  3. Spread basil pesto on one slice of sourdough bread

  4. Layer avocado, leafy greens, and tomato slices on the pesto-covered slice

  5. Top with shredded vegan cheese

  6. Place the other slice of sourdough bread on top
