Vegan Veggie Sandwich with Basil Pesto

Ingredients

  • basil pesto
  • avocado
  • leafy greens
  • tomato slices
  • sourdough bread
  • melty shredded vegan cheese

Basil pesto

  • 3 cups basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts or cashews
  • 2 garlic cloves
  • Himalayan sea salt, to taste

Preparation

  1. Add all ingredients except olive oil to a food processor for the basil pesto and pulse until evenly chopped.

  2. Slowly add olive oil through the top of the processor and pulse until combined.

  3. Spread the basil pesto on slices of sourdough bread.

  4. Layer with avocado, tomato slices, leafy greens, and melty shredded vegan cheese.

  5. Serve the sandwich immediately.
