Fig and Quinoa Salad with Avocado Dressing

Ingredients

Salad

  • 4 seasonal figs
  • 1 cup quinoa
  • spring onions
  • 1 cup of peas
  • 3-4 radishes
  • 1 handful of fresh spinach

Avocado dressing

  • 1 avocado
  • 1 handful of fresh spinach
  • 1 clove of garlic
  • Juice from 1/2 lemon
  • 1 tablespoon soy creme fraiche
  • 2 tablespoons of olive oil
  • Salt and pepper

Preparation

  1. Cook the quinoa and mix it with chopped spring onions, radishes, spinach, and peas.

  2. In a mixer, add all the dressing ingredients and mix well.

  3. Add the dressing on top of the salad and serve with sliced figs.
