Fig and Quinoa Salad with Avocado Dressing
Ingredients
Salad
- 4 seasonal figs
- 1 cup quinoa
- spring onions
- 1 cup of peas
- 3-4 radishes
- 1 handful of fresh spinach
Avocado dressing
- 1 avocado
- 1 handful of fresh spinach
- 1 clove of garlic
- Juice from 1/2 lemon
- 1 tablespoon soy creme fraiche
- 2 tablespoons of olive oil
- Salt and pepper
Preparation
Cook the quinoa and mix it with chopped spring onions, radishes, spinach, and peas.
In a mixer, add all the dressing ingredients and mix well.
Add the dressing on top of the salad and serve with sliced figs.
