Easy Shrimp and Spinach Salad
Ingredients
Shrimp
- 1/2 kg cleaned shrimp, deveined
- 1/4 cup oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon dried parsley
- Salt and pepper
Salad
- Spinach
- Roasted corn
- Roasted peaches
- Mozzarella cubes
- Sliced avocado
Dressing
- 1/3 cup olive oil
- Juice of 2 lemons
- 1 tablespoon red wine vinegar
- 1 chopped shallot
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- Salt and pepper
Preparation
Cook the shrimp in a skillet with the oil and spices until just done, without overcooking.
Whisk together the dressing ingredients until well combined.
Assemble the salad by combining the spinach, roasted corn, roasted peaches, mozzarella cubes, and sliced avocado in a bowl.
Toss the salad with the dressing and top with the cooked shrimp.
