Shrimp Coleslaw Salad with Corn

Ingredients

  • 1 lb shrimp
  • 2 tsp smoked paprika
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 tsp chili flakes (optional)
  • 1 bag coleslaw mix
  • 2 tbsp mayonnaise
  • 2 tbsp Greek yogurt
  • 1 lime (juiced)
  • 1 avocado
  • 1 cup cherry tomatoes
  • 1 cup corn (fresh, canned, or frozen)
  • Olive oil (for marinating and cooking)

Preparation

  1. Pat dry the shrimp and toss with a drizzle of olive oil, smoked paprika, salt, pepper, and chili flakes if using; let marinate for 10 minutes.

  2. Heat a large skillet with oil and add the shrimp, cook for 3 minutes per side.

  3. In a large bowl, combine the coleslaw with Greek yogurt, mayonnaise, and lime juice; season with salt and pepper.

  4. Assemble the salads with coleslaw, diced avocado, sliced cherry tomatoes, corn, and shrimp.
