Shrimp Coleslaw Salad with Corn
Ingredients
- 1 lb shrimp
- 2 tsp smoked paprika
- 1 tsp sea salt
- 1 tsp pepper
- 1 tsp chili flakes (optional)
- 1 bag coleslaw mix
- 2 tbsp mayonnaise
- 2 tbsp Greek yogurt
- 1 lime (juiced)
- 1 avocado
- 1 cup cherry tomatoes
- 1 cup corn (fresh, canned, or frozen)
- Olive oil (for marinating and cooking)
Preparation
Pat dry the shrimp and toss with a drizzle of olive oil, smoked paprika, salt, pepper, and chili flakes if using; let marinate for 10 minutes.
Heat a large skillet with oil and add the shrimp, cook for 3 minutes per side.
In a large bowl, combine the coleslaw with Greek yogurt, mayonnaise, and lime juice; season with salt and pepper.
Assemble the salads with coleslaw, diced avocado, sliced cherry tomatoes, corn, and shrimp.
