Citrus Avocado Salad with Kale
Ingredients
- 1/2 avocado
- 5 cups baby kale
- 1/2 cup raw walnuts
- 1/4 cup fresh dill
- 1/4 cup vegan feta
- 1/2 cup chickpeas
- Sea salt, cracked pepper
- Chili flakes
- 1 ruby grapefruit
- 1 cara cara orange
- 1 blood orange
- 1 tangerine
Preparation
Remove the skin from the citrus fruits with a sharp knife and slice them.
In a large bowl, combine baby kale, sliced avocado, walnuts, dill, vegan feta, chickpeas, and sliced citrus fruits.
Prepare a simple blood orange vinaigrette using part of the blood orange and drizzle it over the salad.
Toss everything together and season with sea salt, cracked pepper, and chili flakes to taste.
Tips
Chili flakes really enhance the citrus flavor and make the salad pop.
