Chickpea Chop Chop Salad with Smoky Chickpeas
Ingredients
- 1 can chickpeas
- smoked paprika
- garlic powder
- romaine lettuce
- kale
- olives
- carrots
- cabbage
- parsley
- mint
- cashew yogurt
- balsamic vinegar
- pomegranate molasses
- chili flakes
- black pepper
Preparation
Drain 1 can of chickpeas and toss with smoked paprika and garlic powder and bake until crispy on a sheet pan at 400 degrees Fahrenheit for about 20 minutes
While the chickpeas are baking, chop the vegetables and herbs and place them in a bowl
Top the salad with the crispy chickpeas, add black pepper and chili flakes, and drizzle with cashew yogurt, pomegranate molasses, and balsamic vinegar and serve
