Chickpea Chop Chop Salad with Smoky Chickpeas

Ingredients

  • 1 can chickpeas
  • smoked paprika
  • garlic powder
  • romaine lettuce
  • kale
  • olives
  • carrots
  • cabbage
  • parsley
  • mint
  • cashew yogurt
  • balsamic vinegar
  • pomegranate molasses
  • chili flakes
  • black pepper

Preparation

  1. Drain 1 can of chickpeas and toss with smoked paprika and garlic powder and bake until crispy on a sheet pan at 400 degrees Fahrenheit for about 20 minutes

  2. While the chickpeas are baking, chop the vegetables and herbs and place them in a bowl

  3. Top the salad with the crispy chickpeas, add black pepper and chili flakes, and drizzle with cashew yogurt, pomegranate molasses, and balsamic vinegar and serve
