Crunchy Chickpea Salad with Fresh Veggies
Ingredients
- 1 bell pepper
- 10-15 cherry tomatoes
- 1 can chickpeas
- 1/2-1 red onion
- Parsley
- Coriander
- Lime juice
- Salt
- Pepper
Preparation
Drain and rinse the chickpeas from the can.
Chop the bell pepper, red onion, parsley, and coriander.
Halve the cherry tomatoes.
In a large bowl, combine all the prepared ingredients.
Drizzle with lime juice, season with salt and pepper, and toss well to mix.
