Crunchy Chickpea Salad with Fresh Veggies

Ingredients

  • 1 bell pepper
  • 10-15 cherry tomatoes
  • 1 can chickpeas
  • 1/2-1 red onion
  • Parsley
  • Coriander
  • Lime juice
  • Salt
  • Pepper

Preparation

  1. Drain and rinse the chickpeas from the can.

  2. Chop the bell pepper, red onion, parsley, and coriander.

  3. Halve the cherry tomatoes.

  4. In a large bowl, combine all the prepared ingredients.

  5. Drizzle with lime juice, season with salt and pepper, and toss well to mix.
