Citrus Avocado Salad with Roasted Squash

Ingredients

  • 1/2 avocado
  • 5 cups curly kale
  • 1/2 cup raw walnuts
  • 1 small delicata squash
  • 1/2 tofu brick
  • 1/4 cup vegan feta
  • 1/2 cup chickpeas
  • 1/2 cup blackberries
  • Sea salt
  • Cracked pepper
  • Chili flakes
  • 1 blood orange
  • Olive oil

Preparation

  1. Preheat oven to 400 degrees.

  2. Toss the delicata squash and tofu with olive oil, salt, and pepper.

  3. Roast for 20 minutes, then flip and roast for another 10 minutes.

  4. Place all ingredients in a bowl and toss gently.

  5. Drizzle with olive oil, salt, pepper, and chili flakes.

Tips

  1. Chili flakes really make the citrus pop.
