Citrus Avocado Salad with Roasted Squash

Ingredients

  • 1/2 avocado
  • 5 cups curly kale
  • 1/2 cup raw walnuts
  • 1 small delicata squash
  • 1/2 tofu brick
  • 1/4 cup vegan feta
  • 1/2 cup chickpeas
  • 1/2 cup blackberries
  • Sea salt and cracked pepper
  • Chili flakes
  • 1 blood orange

Preparation

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Toss the delicata squash and tofu with olive oil, salt, and pepper.

  3. Roast for 20 minutes, then flip and roast for an additional 10 minutes.

  4. Slice the avocado and blood orange.

  5. Place all ingredients in a bowl and toss gently.

  6. Drizzle with olive oil, salt, pepper, and chili flakes.

  7. Enjoy the salad.

  1. Chili flakes really enhance the citrus flavors.
