Homemade Everything Bagel Rice Bowl

Ingredients

  • Jade pearl rice
  • Mushrooms
  • Brussels sprouts
  • Chipotle sea salt
  • Baby greens
  • Strawberries
  • Avocado
  • Baby cucumbers
  • Steamed beets
  • Orange baby tomatoes
  • Basil

  • Everything bagel seasoning

Everything bagel seasoning

  • 2 tbsp poppy seeds
  • 1.5 tbsp dried minced garlic
  • 1.5 tbsp dried minced onion
  • 1 tbsp white sesame seeds
  • 1 tbsp black sesame seeds
  • 0.5 tbsp red pepper flakes (optional)
  • 2 tsp coarse sea salt

Tofu

  • 1 block extra firm tofu
  • 0.5 cup corn starch
  • 0.33 cup plant milk
  • 2 tbsp everything bagel seasoning
  • 1 tbsp harissa powder (optional)
  • 1 tsp sea salt
  • 0.25 cup neutral oil

Preparation

  1. Cook jade pearl rice according to package instructions

  2. Saute mushrooms and brussels sprouts with chipotle sea salt until softened

  3. Steam beets until tender

  4. Prepare the everything bagel seasoning by combining all ingredients in a bowl and stirring until well incorporated

  5. For the tofu, place plant milk in a bowl and whisk together corn starch, everything bagel seasoning, harissa powder, and salt in a separate bowl

  6. Dip tofu cubes in plant milk, then coat in the corn starch mixture, ensuring all sides are covered

  7. Heat oil in a skillet and cook tofu until golden on all sides, about 1-2 minutes per side

  8. Assemble the bowl with a base of chopped baby greens, topped with strawberries, avocado, baby cucumbers, steamed beets, orange baby tomatoes, basil, chives, and a sprinkle of everything bagel seasoning

  9. Add cooked rice, sauteed vegetables, and tofu to the bowl
