Everything Bagel Rice Bowl with Harissa Tofu
Ingredients
Everything bagel seasoning
- 2 tbsp poppy seeds
- 1 1/2 tbsp dried minced garlic
- 1 1/2 tbsp dried minced onion
- 1 tbsp white sesame seeds
- 1 tbsp black sesame seeds
- 1/2 tbsp red pepper flakes (optional)
- 2 tsp coarse sea salt
Tofu
- 1 block extra firm tofu
- 1/2 cup corn starch
- 1/3 cup plant milk
- 2 tbsp everything bagel seasoning
- 1 tbsp harissa powder (optional)
- 1 tsp sea salt
- 1/4 cup neutral oil
Bowl components
- mushrooms
- brussels sprouts
- jade pearl rice
- baby greens
- strawberries
- avocado
- baby cucumbers
- beets
- orange baby tomatoes
- basil
- chives
- everything bagel seasoning
- chipotle sea salt
Preparation
Everything bagel seasoning
Combine all the ingredients in a bowl and stir until well incorporated.
Store in a spice jar and enjoy.
Tofu
Place the plant milk in a bowl.
In a separate bowl, whisk together the corn starch, everything bagel seasoning, harissa and salt.
Dip the tofu cubes first in the plant milk then roll into the corn starch mix, ensuring each cube is coated on all sides.
Heat up the oil in a skillet and once hot, add the tofu and cook until golden on all sides, about 1-2 minutes per side.
Rice bowl assembly
Cook the rice according to package instructions.
Sauté the mushrooms and brussels sprouts with chipotle sea salt until tender.
Steam the beets until soft.
Prepare the salad by chopping the baby greens and combining with strawberries, avocado, baby cucumbers, orange baby tomatoes, basil, and chives.
Assemble the bowl by layering rice, tofu, sautéed vegetables, salad, and sprinkle with everything bagel seasoning.
