Strawberry Kale and Beets Salad
Ingredients
- 1 cup jade pearl rice
- 1/2 teaspoon sea salt
- kale
- beets
- blanched asparagus
- shelled edamame
- pumpkin seeds
- sliced strawberries
- fresh basil
- fresh mint
- fresh dill
Preparation
Do not rinse the jade pearl rice beforehand. Combine 1 cup jade pearl rice with 1 1/3 cups water and 1/2 teaspoon sea salt in a pot. Bring to a boil, then lower to a gentle simmer, cover, and cook until all water is absorbed, about 15 minutes. Let sit covered for 5-10 minutes, then fluff with a fork.
Assemble the salad by combining kale, beets, blanched asparagus, shelled edamame, pumpkin seeds, sliced strawberries, fresh basil, fresh mint, and fresh dill in a bowl.
