Strawberry Kale and Beets Salad

Ingredients

  • 1 cup jade pearl rice
  • 1/2 teaspoon sea salt
  • kale
  • beets
  • blanched asparagus
  • shelled edamame
  • pumpkin seeds
  • sliced strawberries
  • fresh basil
  • fresh mint
  • fresh dill

Preparation

  1. Do not rinse the jade pearl rice beforehand. Combine 1 cup jade pearl rice with 1 1/3 cups water and 1/2 teaspoon sea salt in a pot. Bring to a boil, then lower to a gentle simmer, cover, and cook until all water is absorbed, about 15 minutes. Let sit covered for 5-10 minutes, then fluff with a fork.

  2. Assemble the salad by combining kale, beets, blanched asparagus, shelled edamame, pumpkin seeds, sliced strawberries, fresh basil, fresh mint, and fresh dill in a bowl.
