Green Millet and Chickpea Power Bowl

Ingredients

Bowl components

  • chopped baby spinach
  • millet
  • za'atar chickpeas
  • shelled edamame
  • green olives
  • chimichurri seasoned brussels sprouts
  • fresh mint
  • fresh basil
  • raw pumpkin seeds

Creamy mint and hemp seed dressing

  • 1/2 cup vegan yogurt
  • 1/4 cup hulled hemp seeds
  • 2 tbsp water
  • 2 tbsp lemon juice
  • 1 tbsp fresh mint leaves
  • 1 tsp fresh dill
  • 1 small garlic clove
  • 1 small jalapeno
  • 1 tsp sea salt

Cucumber salad

  • 1 cucumber
  • 1 key lime
  • 1 tbsp dill
  • sea salt

Preparation

Creamy mint and hemp seed dressing

  1. Combine the water and hemp seeds in a high speed blender and pulse until smooth.

  2. Add the rest of the ingredients and pulse again until smooth and creamy.

  3. Top with more hemp seeds and dill and enjoy.

Cucumber salad

  1. Peel and chop 1 cucumber.

  2. Combine in a bowl with juice of 1 key lime, 1 tbsp dill and a sprinkle of sea salt.

  3. Stir and enjoy.

Assembly

  1. Prepare all components.

  2. In a bowl, add a base of chopped baby spinach and top with millet, za'atar chickpeas, edamame, green olives, chimichurri seasoned brussels sprouts, mint, basil, raw pumpkin seeds, cucumber salad and creamy mint and hemp seed dressing.
