Kale and Tropical Fruit Salad with Tofu
Ingredients
- Kale
- Red dragon fruit
- Yellow dragon fruit
- Blackberries
- Avocado
- Jalapeno
- Macadamia nuts
- Purple basil
- Cilantro
- Scallions
- Olive oil
Tofu
- 1/2 block tofu
- 1 tbsp avocado oil
- Sea salt
- Chipotle or seasonings of choice
Citrus vinaigrette
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp fresh orange juice
- 1 tsp orange zest
- 1/2 tsp agave or maple syrup
- 1/2 tsp sea salt
Preparation
Massage the kale with olive oil.
Toast the macadamia nuts.
Assemble the salad in a bowl with kale as the base and top with fruits, vegetables, tofu, nuts, and herbs.
Drizzle with the citrus vinaigrette and serve.
Tofu
Chop 1/2 a block of tofu into cubes and pat dry.
Heat up 1 tbsp avocado oil in a skillet and once hot add the tofu cubes and cook until golden on all sides.
Sprinkle with sea salt and chipotle or seasonings of choice.
Vinaigrette
Combine all the vinaigrette ingredients in a jar.
Shake until seamlessly combined.
