Kale and Tropical Fruit Salad with Tofu

Ingredients

  • kale
  • olive oil
  • red dragon fruit
  • yellow dragon fruit
  • blackberries
  • avocado
  • jalapeno
  • macadamia nuts
  • purple basil
  • cilantro
  • scallions

Tofu

  • 1/2 block tofu
  • 1 tbsp avocado oil
  • sea salt
  • chipotle or seasonings of choice

Vinaigrette

  • 3 tbsp olive oil
  • 1 tbsp white vinegar
  • 1 tbsp fresh orange juice
  • 1 tsp orange zest
  • 1/2 tsp agave or maple syrup
  • 1/2 tsp sea salt

Preparation

  1. Massage the kale with olive oil until softened.

  2. Toast the macadamia nuts in a dry skillet until golden.

  3. Chop half a block of tofu into cubes and pat dry.

  4. Heat 1 tablespoon of avocado oil in a skillet over medium heat.

  5. Add the tofu cubes and cook until golden on all sides.

  6. Sprinkle the tofu with sea salt and chipotle or seasonings of choice.

  7. Combine 3 tablespoons olive oil, 1 tablespoon white vinegar, 1 tablespoon fresh orange juice, 1 teaspoon orange zest, 1/2 teaspoon agave or maple syrup, and 1/2 teaspoon sea salt in a jar.

  8. Shake the jar until the ingredients are well combined.

  9. Assemble the salad by placing the massaged kale in a bowl and topping with red dragon fruit, yellow dragon fruit, blackberries, avocado, jalapeno, fried tofu, toasted macadamia nuts, purple basil, cilantro, and scallions.

  10. Drizzle with the citrus vinaigrette and serve.
