Kale and Tropical Fruit Salad with Tofu
Ingredients
- kale
- olive oil
- red dragon fruit
- yellow dragon fruit
- blackberries
- avocado
- jalapeno
- macadamia nuts
- purple basil
- cilantro
- scallions
Tofu
- 1/2 block tofu
- 1 tbsp avocado oil
- sea salt
- chipotle or seasonings of choice
Vinaigrette
- 3 tbsp olive oil
- 1 tbsp white vinegar
- 1 tbsp fresh orange juice
- 1 tsp orange zest
- 1/2 tsp agave or maple syrup
- 1/2 tsp sea salt
Preparation
Massage the kale with olive oil until softened.
Toast the macadamia nuts in a dry skillet until golden.
Chop half a block of tofu into cubes and pat dry.
Heat 1 tablespoon of avocado oil in a skillet over medium heat.
Add the tofu cubes and cook until golden on all sides.
Sprinkle the tofu with sea salt and chipotle or seasonings of choice.
Combine 3 tablespoons olive oil, 1 tablespoon white vinegar, 1 tablespoon fresh orange juice, 1 teaspoon orange zest, 1/2 teaspoon agave or maple syrup, and 1/2 teaspoon sea salt in a jar.
Shake the jar until the ingredients are well combined.
Assemble the salad by placing the massaged kale in a bowl and topping with red dragon fruit, yellow dragon fruit, blackberries, avocado, jalapeno, fried tofu, toasted macadamia nuts, purple basil, cilantro, and scallions.
Drizzle with the citrus vinaigrette and serve.
