Vegan Citrus Avocado Kale Salad
Ingredients
- 1/2 avocado
- 5 cups curly kale
- 1/2 cup raw walnuts
- 1 small delicata squash
- 1/2 block tofu
- 1/4 cup vegan feta
- 1/2 cup chickpeas
- 1/2 cup blackberries
- Sea salt
- Cracked pepper
- Chili flakes
- 1 blood orange
- Olive oil
Preparation
Preheat the oven to 400 degrees Fahrenheit.
Toss the delicata squash and tofu with olive oil, salt, and pepper.
Roast for 20 minutes, then flip and roast for another 10 minutes.
Place all the ingredients in a bowl and toss gently.
Drizzle with olive oil, salt, pepper, and chili flakes.
Tips
Chili flakes greatly enhance the citrus flavor.
