Shrimp Tacos with Mexican Street Corn

Ingredients

  • corn
  • cilantro
  • red onion
  • jalapeño
  • garlic
  • lime
  • mayonnaise
  • feta cheese
  • 1 pound shrimp
  • 1 teaspoon smoked paprika
  • salt and pepper
  • taco shells
  • avocado oil

Preparation

  1. Sauté the corn and combine it with the remaining ingredients to make the Mexican street corn

  2. Heat a large skillet with avocado oil

  3. Pat dry the shrimp and season with smoked paprika, salt, and pepper

  4. Add the shrimp and cook undisturbed for 3 minutes, then flip and cook for another 2 minutes, spreading shrimp apart and cooking in batches if necessary

  5. Heat up the taco shells and assemble the tacos by adding shrimp and Mexican street corn
