Shrimp Tacos with Mexican Street Corn
Ingredients
- corn
- cilantro
- red onion
- jalapeño
- garlic
- lime
- mayonnaise
- feta cheese
- 1 pound shrimp
- 1 teaspoon smoked paprika
- salt and pepper
- taco shells
- avocado oil
Preparation
Sauté the corn and combine it with the remaining ingredients to make the Mexican street corn
Heat a large skillet with avocado oil
Pat dry the shrimp and season with smoked paprika, salt, and pepper
Add the shrimp and cook undisturbed for 3 minutes, then flip and cook for another 2 minutes, spreading shrimp apart and cooking in batches if necessary
Heat up the taco shells and assemble the tacos by adding shrimp and Mexican street corn
