Lemon Garlic Shrimp Bowls
Ingredients
- 1 lb shrimp
- 1 pint cherry tomatoes
- 3 baby cucumbers
- 1/4 red onion
- 1 lemon
- 1 cup rice (uncooked) or 3 cups cooked
- 3 garlic cloves
- Olive oil and balsamic vinegar
- Salt, pepper, and chili flakes
Preparation
Cook the rice according to your preferred method.
Chop the tomatoes, cucumbers, and red onion and toss with 2 tablespoons olive oil and 1 tablespoon balsamic vinegar.
Finely dice the garlic.
Pat dry the shrimp and sprinkle both sides with salt and pepper.
Add a heaping drizzle of avocado oil to a hot pan and let it heat up.
Add the garlic and chili flakes and cook stirring for 1 minute.
Add the shrimp and cook 3 minutes per side, spreading them apart.
Remove from heat and add juice from 1 lemon.
Assemble the bowls with rice, chopped salad, and shrimp. Optionally, serve on a bed of greens.
Tips
Rice and chopped salad can be prepared in advance.
Shrimp cooks in about 6 minutes, making this dish quick for hosting.
