Lemon Garlic Shrimp Bowls

Ingredients

  • 1 lb shrimp
  • 1 pint cherry tomatoes
  • 3 baby cucumbers
  • 1/4 red onion
  • 1 lemon
  • 1 cup rice (uncooked) or 3 cups cooked
  • 3 garlic cloves
  • Olive oil and balsamic vinegar
  • Salt, pepper, and chili flakes

Preparation

  1. Cook the rice according to your preferred method.

  2. Chop the tomatoes, cucumbers, and red onion and toss with 2 tablespoons olive oil and 1 tablespoon balsamic vinegar.

  3. Finely dice the garlic.

  4. Pat dry the shrimp and sprinkle both sides with salt and pepper.

  5. Add a heaping drizzle of avocado oil to a hot pan and let it heat up.

  6. Add the garlic and chili flakes and cook stirring for 1 minute.

  7. Add the shrimp and cook 3 minutes per side, spreading them apart.

  8. Remove from heat and add juice from 1 lemon.

  9. Assemble the bowls with rice, chopped salad, and shrimp. Optionally, serve on a bed of greens.

Tips

  1. Rice and chopped salad can be prepared in advance.

  2. Shrimp cooks in about 6 minutes, making this dish quick for hosting.
