Broccoli Slaw Chickpea Rice with Lemon Tahini Dressing
Ingredients
- 3 cups (600 g) cooked rice, slightly warm
- 2 1/2 cups (212 g) broccoli slaw, roughly chopped
- 1 (16 oz) can chickpeas
- 1/2 cup (17 g) cilantro, chopped
- Squeeze of lemon
- Salt and pepper to taste
Lemon tahini dressing
- 2 tablespoons (30 g) tahini
- Juice from 1 lemon
- 3 tablespoons (45 ml) olive oil
- 1 teaspoon (5 ml) vegan honey or maple syrup
- 2-3 tablespoons (30-45 ml) water, to thin as needed
- Salt and pepper to taste
Preparation
Make the dressing by combining all of the ingredients and set aside.
Roughly chop the broccoli slaw and add it to a large bowl with the cooked rice, rinsed chickpeas, and chopped cilantro.
Season the mixture with salt, pepper, and a squeeze of lemon.
Pour in one-third to one-half of the dressing, mix well, and serve the remaining dressing on the side.
Notes
This dish is packed with great textures and flavors and includes lots of vegetables.
Cilantro can be substituted with parsley.
