Marinated Greek Chicken Skewers

Ingredients

  • 2-4 chicken breasts
  • 1/3 cup Greek yogurt
  • 1/4 cup olive oil
  • 1 lemon
  • 2 garlic cloves
  • 1 tsp oregano
  • Salt and pepper
  • 1 red pepper
  • 1 red onion

Preparation

  1. Cut chicken into cubes

  2. Whisk together yogurt, olive oil, lemon juice, minced garlic, oregano, salt and pepper

  3. Toss chicken in marinade and let sit in the fridge for a minimum of 30 minutes

  4. Soak skewers in water for 30 minutes

  5. Slice onion and pepper

  6. Assemble skewers and grill for 6 minutes per side

  7. Serve with a big Greek salad and crispy lemon potatoes

Tips

  1. Marinate longer than 30 minutes for better flavor

  2. Great for meal prep or Sunday dinner
