Greek-Inspired Chicken and Veggie Skewers

Ingredients

  • 2 chicken breasts cubed into small pieces
  • 1/4 cup olive oil
  • 1/4 cup Greek yogurt
  • 1/2 lemon squeeze
  • 2-3 garlic cloves grated
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp oregano

Veggies

  • 1 green bell pepper
  • 1 red bell pepper
  • 1/2 red onion
  • 2 tbsp olive oil, salt and pepper

Preparation

  1. Pat dry chicken and dice it into cubes

  2. Add chicken to a glass dish with a lid and add the remainder of ingredients

  3. Close container and shake really well until each chicken piece is coated

  4. Place in the fridge for a minimum of 30 minutes or up to 12 hours

  5. Cut veggies into similar size as chicken

  6. If using wooden skewers, soak them for at least 20 minutes in water before loading them up

  7. Assemble skewers alternating between chicken and veggies

  8. Grill on the barbecue, frying pan or griddle, about 5 minutes per side, rotating, until chicken has cooked through

  9. Serve with tzatziki for dipping and potatoes

Tips

  1. The marinade makes the chicken very juicy

  2. Consider adding veggies to the skewers for extra flavor and nutrition

  3. Serve with a simple tzatziki and roasted potatoes for a complete meal
