Easy Vegan Souvlaki Skewers

Ingredients

  • 1 cup (190g) tofu or chickpeas
  • 1 tablespoon miso paste (optional)
  • salt to taste
  • 1 cup (130g) vital wheat gluten
  • 2/3 cup (75g) chickpea flour
  • 1/2 cup (125ml) water

Marinade

  • 4 tablespoons olive oil
  • juice of 2 lemons
  • salt and pepper to taste
  • 5 cloves garlic, minced
  • a handful fresh rosemary
  • 1 teaspoon dried oregano

Accompaniments

  • homemade pita
  • vegan tzatziki
  • tomato
  • parsley
  • cucumber
  • onion

Preparation

  1. Blend the base ingredients for 2-3 minutes

  2. Knead and pound the mixture for 1-2 minutes, then shape into small bites

  3. Cook the bites in vegetable stock for 20 minutes and let them cool down

  4. Mix the marinade ingredients

  5. Marinate the seitan bites for 2-4 hours

  6. Thread the marinated seitan onto skewers and grill until done

  7. Serve with homemade pita, vegan tzatziki, and a salad of tomato, parsley, cucumber, and onion mixed with lemon juice
