Easy Vegan Souvlaki Skewers
Ingredients
- 1 cup (190g) tofu or chickpeas
- 1 tablespoon miso paste (optional)
- salt to taste
- 1 cup (130g) vital wheat gluten
- 2/3 cup (75g) chickpea flour
- 1/2 cup (125ml) water
Marinade
- 4 tablespoons olive oil
- juice of 2 lemons
- salt and pepper to taste
- 5 cloves garlic, minced
- a handful fresh rosemary
- 1 teaspoon dried oregano
Accompaniments
- homemade pita
- vegan tzatziki
- tomato
- parsley
- cucumber
- onion
Preparation
Blend the base ingredients for 2-3 minutes
Knead and pound the mixture for 1-2 minutes, then shape into small bites
Cook the bites in vegetable stock for 20 minutes and let them cool down
Mix the marinade ingredients
Marinate the seitan bites for 2-4 hours
Thread the marinated seitan onto skewers and grill until done
Serve with homemade pita, vegan tzatziki, and a salad of tomato, parsley, cucumber, and onion mixed with lemon juice
