Vegan Lion's Mane Mushroom Gyros

Ingredients

  • 1 lion's mane mushroom
  • 1 tomato
  • Pickled onions
  • Coriander
  • Hot sauce
  • Pita bread

Steak marinade

  • 2 tbsp beetroot juice
  • 1 tsp garlic powder
  • 1 tbsp soy sauce
  • 1 tsp onion powder
  • 1 tbsp smoked paprika
  • Salt and pepper
  • 2 tbsp olive oil

Tzatziki

  • 4 tbsp vegan Greek yoghurt
  • Half a cucumber
  • Handful of mint
  • 1 garlic clove
  • Glug of olive oil
  • Juice of half a lemon
  • Salt

Preparation

  1. Drizzle some oil and salt in a skillet, add the mushroom, spread it around to heat up, and place another pan on top without pressing.

  2. Remove the top pan, move the mushroom around, repeat the process, flip it over to sear, and repeat on the other side to shape it like steak.

  3. Mix the steak marinade ingredients in a container, coat the mushroom thoroughly, and refrigerate.

  4. Mix the tzatziki ingredients, pickle the onions, and chop the tomato.

  5. Remove the steak from the fridge, heat oil in a skillet, and fry the mushroom for 3-4 minutes per side until charred, or grill on a BBQ.

  6. Heat the pita bread, assemble with tzatziki, steak, fresh vegetables, and top with hot sauce, then serve.
