Honey Harissa Baked Chicken

Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1/4 cup honey
  • 1-2 tablespoons rose harissa
  • 1 garlic clove, grated
  • Juice of 1/2 lemon
  • 1/2 teaspoon salt
  • 1 red onion
  • Rice and green vegetables to serve

Preparation

  1. Preheat the oven to 180C.

  2. In a small bowl, whisk together the honey, harissa, lemon juice, and garlic.

  3. Heat a non-stick pan and add a little olive oil.

  4. Pat the chicken dry with paper towels and season with salt and pepper.

  5. Brown the chicken, two at a time, for a few minutes on each side.

  6. Transfer the chicken to an oven-proof dish with the red onion, cover, and bake for 20 minutes.

  7. Remove from the oven and pour out any liquid released from the chicken, leaving a little if desired to form a sauce.

  8. Add the honey-harissa mixture to the chicken, mix, and return to the oven. Bake for a further 15-20 minutes until the chicken is cooked through.

  9. Optionally, grill on high heat for 3 to 5 minutes.

Tips

  1. Adjust the amount of harissa based on spice preference.

  2. Serve with rice or quinoa and green vegetables.
