Honey Harissa Baked Chicken
Ingredients
- 4 chicken breasts
- 1 tablespoon olive oil
- 1/4 cup honey
- 1-2 tablespoons rose harissa
- 1 garlic clove, grated
- Juice of 1/2 lemon
- 1/2 teaspoon salt
- 1 red onion
- Rice and green vegetables to serve
Preparation
Preheat the oven to 180C.
In a small bowl, whisk together the honey, harissa, lemon juice, and garlic.
Heat a non-stick pan and add a little olive oil.
Pat the chicken dry with paper towels and season with salt and pepper.
Brown the chicken, two at a time, for a few minutes on each side.
Transfer the chicken to an oven-proof dish with the red onion, cover, and bake for 20 minutes.
Remove from the oven and pour out any liquid released from the chicken, leaving a little if desired to form a sauce.
Add the honey-harissa mixture to the chicken, mix, and return to the oven. Bake for a further 15-20 minutes until the chicken is cooked through.
Optionally, grill on high heat for 3 to 5 minutes.
Tips
Adjust the amount of harissa based on spice preference.
Serve with rice or quinoa and green vegetables.
