Baked Chicken Tray Kebab
Ingredients
- 1 kg chicken mince (with a bit of tail fat)
- 4 tablespoons olive oil
- 1 onion
- 1 tablespoon tomato paste
- 2 red bell peppers
- half bunch parsley
- garlic
- black pepper
- cumin
- red pepper flakes
- salt
Preparation
Blend onion, peppers, and garlic in a blender.
Finely chop the parsley.
Add the blended mixture and parsley to the chicken mince and knead, using a little less salt since the dish will release water during cooking.
There is no need to grease the tray bottom.
Press the mixture evenly into the tray with your hands.
Arrange slices of tomato, pepper, and potato on top.
Bake in a preheated oven at 200°C for 40 minutes.
