Baked Mixed Vegetable Meatballs
Ingredients
Vegetables
- 2 medium potatoes
- 2 tomatoes
- 1 zucchini
- 1 eggplant
- 2 green peppers
- 1 bell pepper
- 3 cloves garlic
- 1/2 cup olive oil
- 1 teaspoon red pepper flakes
- 1 teaspoon red pepper powder
- 1 tablespoon oregano
- Salt
Meatballs
- 300g ground beef
- 1 egg
- 1 grated onion
- 1 grated garlic clove
- 4.5 tablespoons bread crumbs
- Salt, black pepper, red pepper powder, and cumin
Sauce
- 300 ml hot water
- 1 teaspoon tomato paste
- 1/2 teaspoon pepper paste
- A pinch of salt
Preparation
First, chop all vegetables into cubes and try not to make them too large, otherwise they will be hard to cook.
Place the vegetables in a suitable baking dish, add salt, spices, and olive oil, then mix well.
Bake in a preheated oven at 200 degrees Celsius on fan-assisted or conventional setting for 25 to 30 minutes, stirring the vegetables halfway through the cooking time.
Meanwhile, mix the meatball ingredients and shape into walnut-sized balls, then let them rest in the refrigerator until the vegetables are done.
When the vegetables are lightly colored and the potatoes are slightly softened, arrange the meatballs on top.
For the sauce, mix the tomato paste and pepper paste with hot water and a little salt, then pour it over the dish.
Return to the oven and bake until the meatballs are browned, about 20 minutes.
