Baked Turkish Meatballs with Vegetables

Ingredients

  • 400 grams ground beef
  • 2 potatoes
  • 2 eggplants
  • 3-4 green peppers
  • 4 tomatoes
  • 1 tablespoon mixed tomato and pepper paste
  • Oil for frying

For meatballs

  • Half cup bread crumbs or bread inside
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon red pepper powder
  • 1 teaspoon black pepper
  • 1 teaspoon thyme and cumin
  • 1 clove garlic
  • Salt to taste

Preparation

  1. Mix the meatball mixture and shape into balls, then set aside.

  2. Chop the potatoes, eggplants, and peppers lengthwise.

  3. Peel the tomatoes and cut them into cubes.

  4. Fry the potatoes first, then the eggplants, and finally the meatballs partially without fully cooking them.

  5. Spread the fried ingredients in a baking tray.

  6. Place the peppers and tomatoes on top and sprinkle with a little salt.

  7. Mix the tomato paste with two cups of water and pour it over the arranged ingredients.

  8. Cover with wet parchment paper and bake at 170-180 degrees Celsius.

  9. Remove the paper 10 minutes before the end of baking to allow the top to brown. Enjoy.
