Baked Turkish Köfte with Vegetables
Ingredients
- 3 potatoes
- 3 tomatoes
- 3-4 bell peppers
- 2 eggplants
- 2 zucchinis
- 1 tablespoon tomato paste
- some oil
Köfte mixture
- 250g ground meat
- 1 small onion
- 1 clove garlic
- salt
- black pepper
- cumin
Preparation
Mix the köfte ingredients and shape them into meatballs.
Slice the vegetables into rounds.
Optionally, fry the vegetables in oil until lightly browned for better flavor, but you can assemble without frying.
Arrange the meatballs and vegetables in layers in a baking dish.
In a small bowl, mix 1 tablespoon of tomato paste with a little water to make a sauce.
Pour the sauce over the arranged ingredients.
Drizzle with a bit of oil.
Bake in the oven until everything is cooked through.
Notes
Serve with soup, rice pilaf, and salad for a complete iftar menu.
