Baked Meatball Vegetable Dish

Ingredients

Meatballs

  • 300g ground meat
  • 1 egg
  • 1 grated onion
  • 3 cloves grated garlic
  • 4-5 tablespoons breadcrumbs
  • Salt
  • Red pepper flakes
  • Black pepper
  • Cumin

Vegetables

  • 3 potatoes
  • 2 eggplants (optional)
  • 2 tomatoes
  • 2 green peppers
  • 4-5 garlic cloves
  • 1/2 cup vegetable oil
  • Salt
  • Black pepper
  • Thyme
  • Red pepper flakes

Sauce

  • 300 ml hot water
  • 1 teaspoon tomato paste
  • 1/2 teaspoon pepper paste
  • A little salt

Preparation

  1. Knead all meatball ingredients together and let rest in the refrigerator.

  2. Prepare the vegetables by mixing them well with oil and spices.

  3. Bake the vegetables in the oven at 200°C until they soften slightly.

  4. While the vegetables are baking, shape the meatballs and keep them refrigerated.

  5. Once vegetables are ready, remove from oven and place the meatballs on top.

  6. Prepare the sauce by mixing hot water, tomato paste, pepper paste, and a little salt.

  7. Pour the sauce over the dish and bake at 180-200°C until everything is cooked.
