Baked Meatball and Vegetable Casserole
Ingredients
Meatballs
- 300g ground meat
- 1 egg
- 1 grated onion
- 3 grated garlic cloves
- 4-5 tablespoons bread crumbs
- Salt
- Red pepper flakes
- Black pepper
- Cumin
Vegetables
- 3 potatoes
- 2 eggplants (optional)
- 2 tomatoes
- 2 green peppers
- 4-5 garlic cloves
- 1/2 cup vegetable oil
- Salt
- Black pepper
- Thyme
- Red pepper flakes
Sauce
- 300ml hot water
- 1 teaspoon tomato paste
- 1/2 teaspoon red pepper paste
- A pinch of salt
Preparation
Mix all meatball ingredients thoroughly and let rest in the refrigerator.
Mix the vegetables with oil and spices.
Bake the vegetables at 200°C until slightly softened.
While the vegetables are baking, shape the meatballs into rounds and return them to the refrigerator.
Once the vegetables are soft, remove them from the oven and place the meatballs on top.
Mix the sauce ingredients together.
Pour the sauce over the dish and bake at 180-200°C until cooked through.
