Baked Stuffed Potato Bowls

Ingredients

  • 6 potatoes
  • 350-400 grams ground beef
  • 1 medium onion
  • 2 red bell peppers
  • 3-4 green chili peppers
  • 2 tablespoons vegetable oil or olive oil
  • 1 teaspoon pepper paste
  • 1 teaspoon tomato paste
  • 1 teaspoon salt
  • A pinch of black pepper
  • Oil for frying potatoes

Sauce

  • 1 tablespoon tomato paste
  • 2 cups boiling water
  • 1 teaspoon red pepper flakes
  • Salt to taste

Preparation

  1. Peel and wash the potatoes, cut them in half, and hollow out the insides with a teaspoon, then prepare all potatoes.

  2. Fry the potatoes until golden and place them on paper towels to drain excess oil.

  3. In a pan, sauté finely chopped onion in 2 tablespoons of oil until translucent, then add ground meat and cook until browned.

  4. Stir in the pepper paste and tomato paste until fragrant.

  5. Add chopped bell peppers and hot peppers, stir, season with salt and black pepper, cook until vegetables are slightly softened, and turn off the heat.

  6. In the same pan, prepare the sauce by mixing 1 tablespoon tomato paste, 2 cups boiling water, 1 teaspoon red pepper flakes, and salt to taste.

  7. Place the fried potato halves in a baking tray and fill them with the meat mixture.

  8. Pour the sauce over the stuffed potatoes.

  9. Bake in a preheated 200°C oven until the top is golden.

Notes

  1. Adjust the number of potatoes based on the number of servings.
